Gauthier DENIS, chef trainer at the Lenôtre Culinary Arts School, tells us about his career.

Hello Gauthier, thank you for taking the time to answer our questions! First of all, could you tell us a little about your already remarkable career?

I am passionate about baking and the sensations it brings, and every day I have the chance to work with a living material with multiple possibilities.
During my studies in CAP, complementary mention in specialized bakery as well as a professional certificate, I discovered this fascinating profession. During my various apprenticeships, I had the chance to have enriching experiences in traditional bakeries and then in the world of high end bakery at the Plaza Athénée.


Curious in spirit, I traveled to Italy and Sweden to discover new raw materials and learn new working techniques.


In February 2022, I joined the Lenôtre Culinary Arts School as a Chef Trainer Baker after 4 years as a Chef Teacher at Le Cordon Bleu Paris.
In 2019 I participated in the final of the Coupe de France de Boulangerie by team. We did not win the title but I came 1st in the "Artistic Piece" category. I was then selected to participate in the European Bakery Cup, which took place in October 2021, and our team won 3rd place.


Why did you choose the teaching path?

In my opinion, the transmission of our know-how and its evolution is essential to ensure the survival of our profession and its values.


Beyond the technical gestures, what is important to transmit to your students ?

You have to be curious, humble and not be afraid to take the plunge. It's an exciting job where every day is a new challenge. 


In your opinion, what are the essential values of a baker?

A baker must be able to work in a team, but the key to this profession is patience and humility.


The Lenôtre school is equipped with an ONYX Fit deck oven, after having had a Rubis for several years; what is the advantage for your students of working on a modern oven?

The advantage of a modern oven is that you can follow the technical evolution of the oven and the evolution of the profession. This allows a trainee to be as accurate as possible in his or her firing.


What is the most important equipment in a bakery?

In bakery, the most important element is the oven. We call it the judge of peace, nothing is certain until the end of the baking process.

After several years of daily use of a Rubis Touch oven - modular oven, the Lenôtre Culinary Arts School has just acquired an ONYX FIT deck oven

After several years of good and loyal service, this Rubis Touch oven has been replaced by a new generation oven, more compact, which is the ONYX FIT. The school has donated its old Rubis Touch to an association so that it can have a second life.

Bonjour Gauthier, merci de prendre le temps de répondre à nos questions ! Tout d'abord pourriez-vous nous présenter en quelques mots votre parcours déjà remarquable ?

Passionné par la boulangerie et les sensations qu’elle procure, chaque jour j’ai la chance de travailler avec une matière vivante aux possibilités multiples.
Durant mes études en CAP, mention complémentaire en boulangerie spécialisée ainsi qu’un brevet professionnel, j’ai découvert ce métier passionnant. Lors de mes différents apprentissages, j’ai eu la chance d’avoir des expériences enrichissantes dans des boulangeries traditionnelles puis dans l’univers de la haute boulangerie au Plaza Athénée.

Curieux d’esprit, j’ai voyagé en Italie et en Suède pour découvrir de nouvelles matières premières et apprendre de nouvelles techniques de travail.

En février 2022, j’ai rejoint l’école des Arts Culinaires Lenôtre en tant que chef formateur Boulanger après 4 années passées en tant que Chef Enseignant à l’institut Le Cordon Bleu Paris.
En 2019 j’ai participé à la finale de la Coupe de France de Boulangerie par équipe. Nous n’avons pas remporté le titre mais je suis arrivé 1er dans la catégorie « Pièce Artistique ». J’ai ensuite été sélectionné pour participer à la Coupe d’Europe de Boulangerie, qui s’est déroulée en octobre 2021, et notre équipe a remporté la 3ème place.

Pourquoi avoir choisi la voie de l'enseignement ?

La transmission de notre savoir-faire et de ses évolutions est, à mon sens, indispensable pour faire perdurer notre métier et ses valeurs.

Au-delà des gestes techniques, qu'est-il important de transmettre à vos étudiants ?

Il faut être curieux, humble et ne pas avoir peur de se lancer. C’est un métier passionnant où chaque jour est un nouveau challenge. 

Selon vous, quelles sont les valeurs indispensables d'un boulanger ?

Un boulanger doit être capable de travailler en équipe, mais la clef de ce métier c’est la patience et l’humilité.

L'école Lenôtre s'est équipée d'un four à soles ONYX Fit, après avoir eu un Rubis durant plusieurs années ; quel est le plus pour vos étudiants de travailler sur un four moderne ?

L’avantage d’un four moderne c’est de pouvoir suivre les évolutions techniques de celui-ci associées aux évolutions du métier. Cela permet pour un apprenant d’être au plus juste sur ses cuissons.

Quel est l'équipement le plus important d'un fournil ?

En boulangerie l’élément le plus important c’est le four. On l’appelle le juge de paix, rien n’est certain avant la fin de la cuisson.
